Food Industries — Primary, Secondary and Tertiary

Your breakfast passed through farms, factories, trucks and shops. Unit 2 explores the food industry — Australia's largest manufacturing sector.

Learning objective: Describe Australia's food industry sectors and the journey of food from paddock to plate.

By the end of this lesson you can:

  • I can describe primary, secondary and tertiary food industries.
  • I can trace a food from paddock to plate.
  • I can discuss food safety and regulation in industry.

The food industry is a relay race. Farmers grow (primary), manufacturers process (secondary) and retailers/cafés sell and serve (tertiary). Each passes the baton until food reaches your plate.

Food Industries — Primary, Secondary and Tertiary

SECTORS:
• PRIMARY — growing and harvesting (farming, fishing).
• SECONDARY — processing and manufacturing (milling, canning, packaging).
• TERTIARY — distribution, retail, hospitality, marketing.

PADDOCK TO PLATE:
• Example: wheat → flour mill → bakery → supermarket → consumer.

REGULATION:
• Food Standards Australia New Zealand (FSANZ) sets the Food Standards Code (labelling, additives, safety).
• State food safety regulators; HACCP systems in businesses.

TRENDS:
• Automation, sustainability, plant-based products, convenience foods.

| Sector | Activity | Examples |
|---|---|---|
| Primary | Growing, harvesting, raising | Farms, fisheries |
| Secondary | Processing, manufacturing | Dairy factories, bakeries |
| Tertiary | Distribution, retail, hospitality | Supermarkets, restaurants |

Key ideas at a glance

  • Know the sectors: Primary, secondary, tertiary.
  • Food miles: Distance travelled.
  • Supermarket power: Coles and Woolworths dominance.
  • Careers across sectors: Diverse jobs.

Worked example (Easy)

Trace milk from farm to consumer.

  1. Primary. Dairy farm milks cows.
  2. Secondary. Processor pasteurises, homogenises and packages.
  3. Tertiary. Distributor delivers to supermarket; consumer buys.

Answer: Farm → processor → distribution → retail → consumer.

Worked example (Medium)

Trace milk from farm to fridge.

  1. Primary. Dairy farm milks cows.
  2. Secondary. Factory pasteurises and bottles.
  3. Tertiary. Trucked to supermarket and sold.

Answer: Farm → factory → supermarket.

Common mistakes

  • Confusing sectors Processing is secondary, selling is tertiary. Fix: Classify by activity.

Supermarket duopoly

Coles and Woolworths hold a large share of the Australian grocery market. Critics argue this gives them power over suppliers' prices; inquiries have examined pricing and competition.
